I love Persimmons and Pomegranates during the fall season.  This salad comes beautifully together with all the vibrant colors of fruits and arugula leaves.  Its made with simple dressing and is one of my favorite salad.

INGREDIENTS

2 cups Arugula

1/4 cup cherry tomatoes

2-3 persimmons

1 tablespoon pomegranate seeds

1 tablespoon roasted pumpkin seeds or pistachios

1 tablespoon blue cheese (Optional)

For the Dressing

2 tablespoon extra virgin olive oil

1/2 teaspoon pomegranate molasses (optional)

1/2 teaspoon sea salt and pepper

Few drops of lemon

PREPARATION

Step 1

In a small bowl, combine the ingredients for the dressing and set aside to marinate for 5-10 minutes.

Step 2

Peel and cut thick slices of the persimmons.  In a large bowl combine the arugula, pomegranate seeds, persimmons, cherry tomatoes, roasted pumpkin seeds or chopped pistachios.

Step 3

Drizzle the dressing and toss the salad.  Garnish with blue cheese and serve.
