I love Bhel it’s that simple.  Growing up our favorite afternoon snack was bhel with the family.  The more onions and lemon the better the bhel would taste.  This is my version of a healthy bhel.  Easy to assemble and highly pleasing.

INGREDIENTS

1 cup boiled Barley

1 medium Onion chopped

1 medium Tomato chopped

1 small Mango chopped

1 tablespoon Cilantro chopped

2 tablespoon Bhel mix or Shev

1 tablespoon Tamarind chutney

1 teaspoon Cilantro chutney

1 teaspoon chopped Green Chilies

1 teaspoon Cumin powder

1 teaspoon Chili powder

1 teaspoon Salt

1 teaspoon Lemon

PREPARATION

Step 1

Soak the barley for a half hour. Cook the barley in 2 cups of water with a pinch of salt. Drain the barley and add little olive oil so it’s not sticky.

Step 2

Add all the chopped ingredients, powders, sauces, salt and lemon to the barley

Step 3

Sprinkle with chopped onions, bhel or shev mix, and cilantro. Serve.
