INGREDIENTS

FOR OATMEAL CRUST

1 cup oat flour (ground oats)

2 tbsp Sugar

pinch of salt

1 tbsp apple cider vinegar

1/2 cup cold butter

FOR BLUEBERRY TART FILLING

4 cups frozen blueberry

2/3 cup sugar

1/2 spoon cinnamon powder

pinch of nutmeg

lemon zest (optional)

DIRECTIONS

Step 1

Preheat oven to 400 degrees F. Combine all the ingredients for the oatmeal crust and work in cold butter with fingers. The crust will be crumbly. Line a buttered ramekin/pie plate with the crust and press it down with fingers or the bottom of a glass to even it out. Refrigerate the crust for 15 minutes to set the butter and prevent crust from burning too quickly in the oven.

Step 2

Combine the blueberry filling ingredients mix it well. Then, pile it up on top of the cold crust like a big heap, until you can balance no more on it. The more filling the better. Place the ramekin on a tray as the filling sometimes spills over the edges and inside the oven. Bake it at 400 degrees F for 40-45 mins until the crust is gold brown and sides for the filling are semi-set.

Notes/ Tips

To prevent crust from burning, cover edges with a line of foil for first 20 mins.

Can replace oat flour with all purpose flour or almond meal with same measurements.

Use seasonal berries or fruits to make this dessert.
