Energy bites for any time of the day. I love to snack on these when I am craving for sugary treats.

INGREDIENTS

1 cup organic dates (I buy mine from Costco)

1 cup unsalted pistachios

1 tablespoon shredded dark chocolate

1 cup shredded fresh coconut

1 tablespoon chia seeds

PREPARATION

Step 1

Put the dates in the food processor and pulse it into a few small chunks. Then, remove the dates and add pistachios to the food processor and pulse.

Step 2

Grate dark chocolate and fresh coconut separately.

Step 3

Mix the dates, pistachios, chia seeds, dark chocolate, and coconut in a bowl. Make into small balls and then roll over the shredded coconut.
