My absolutely all time favorite salad.  Inspired by Good Earth cafe in Bangalore, India.  It’s a must eat during my visits to India. The combination of blue cheese and toasted honey glazed walnuts is divine.

INGREDIENTS

2 cups arugula

8-10 fresh figs, quartered

1/2 toasted honey glazed walnuts

1/4 cup blue cheese

1/2 cherry tomatoes

For the dressing:

1/4 freshly squeezed clementine juice (or orange juice)

1/2 teaspoon honey

1/2 teaspoon lemon juice

1/2 teaspoon red wine vinegar

1 tablespoon olive oil

salt and pepper

Step 1

In a large salad bowl toss arugula, figs, cherry tomatoes (sliced), walnuts and blue cheese.

Step 2

Drizzle salad dressing before serving
