Massage the dinosaur Kale for the best tasting quinoa, cranberries and toasted almond salad.  Hands down my favorite Kale recipe inspired by THE SMITH restaurant in New York City.

INGREDIENTS

1 bunch dinosaur Kale

1 cup cooked quinoa

1/4 cup toasted almonds

2 tablespoons cranberries

2 tablespoons grated Parmesan cheese

1 clove garlic

1 small shallot

2 teaspoons lemon juice

2 tablespoons extra virgin olive oil

1 teaspoon sea salt

1/2 teaspoon fresh ground black pepper

PREPARATION

Step 1

Make the dressing by combining olive oil, salt, pepper, lemon juice and chopped garlic and shallots. Keep the dressing aside for 8-10 minutes to marinate.

Step 2

Remove the rib from the kale and thinly slice them as seen in the picture. Pour the salad dressing on top of the kale and massage for 2-3 minutes.

Step 3

Add quinoa to the kale and continue to massage for another 2 minutes. Let all the dressing soak into the kale and quinoa.

Step 4

Add the cranberries, toasted almonds and grated Parmesan to the salad.
