In Korean, Bibim means mix and bap means rice. Bibimbap is a very popular Korean dish made of mixed rice that is loved by all. INGREDIENTS

FOR MARINATION OF CUCUMBER

1 cucumber, chopped into long and thin pieces

salt, to taste

2 tbsp roasted sesame seeds

2 tbsp soy sauce

1 tbsp chili powder

FOR MARINATION OF CARROT

1 carrot, chopped into long and thin pieces

1 tbsp olive oil

1 pinch salt

FOR MARINATION OF SPINACH

1 bunch of spinach

2 tbsp sesame powder

1 tbsp soy sauce

1 tbsp sesame oil

1 tsp minced garlic

FOR MARINATION OF MUSHROOMS

1 cup mushrooms, chopped into bite-size pieces

1 onion, chopped into short thin strips

1 tbsp olive oil

1 tbsp soy sauce

FOR MARINATION OF CABBAGE

1/2 cup purple cabbage, chopped into short thin strips

1/2 cup green cabbage, chopped into short thin strips

2 tbsp apple cider vinegar

1 tbsp black sesame seeds

salt, to taste

FOR RICE

1/2 cup white rice, cooked

1/2 cup brown rice, cooked

1/4 cup spring onions, finely chopped

1 tbsp sesame oil

1 tbsp Gochujang chili paste (you can use any other chili paste as well)

DIRECTIONS

Step 1 

Marinate the vegetables.

FOR MARINATION OF CUCUMBER

Mix the cucumber and salt in a bowl. Cover with a lid and keep aside for 30 mins. Then, drain the excess liquid and add roasted sesame seeds, soy sauce, and chili powder. Mix well and keep aside.

FOR MARINATION OF CARROT

Mix the carrot, olive oil, and salt in a bowl and keep it aside.

FOR MARINATION OF SPINACH

Boil the spinach leaves for 3 mins and then strain and put in cold water for 30 seconds. Remove the leaves and gently squeeze out the excess water without breaking the spinach. Then, add sesame powder, soy sauce, sesame oil, and minced garlic to the spinach. Mix well and keep aside.

FOR MARINATION OF MUSHROOM

In a pan, heat some olive oil and sauté the mushrooms and onions in soy sauce. Mix well and keep it aside.

FOR MARINATION OF CABBAGE

Mix the cabbage, apple cider vinegar, salt, and black sesame seeds. Mix it well and keep it aside.

Step 2 

Mix the cooked white and brown rice in a bowl. Take a pan and heat some sesame oil. Then, sauté the spring onion. Add soy sauce, Gochujang chili paste, and rice and stir fry it. Add salt to taste.

Step 3

Take a big bowl and place the rice in the middle. Then, surround it with all the marinated vegetables. Serve with a side of soy sauce and chili paste.
