Absolutely love this recipe for its lentils, greens and the creative toppings shared by Rupal and Rhea Kothari with Gossip About Food. These lentil waffles make an excellent afternoon snack. Get creative with the toppings!

INGREDIENTS

1 cups moong (split green lentils), soak for 4-5 hours

2 tbsp poha (flattened rice), soak for 7-8 minutes

1/2 cup water

1 cup spinach/cilantro, washed

8-10 roasted peanuts

small piece of ginger

1-2 green chilies

Salt

1/2 tsp eno soda (optional)

2 tbsp flax seeds powder (optional)

1 tbsp fresh coconut (optional)

DIRECTIONS

Step 1

Grind all the ingredients in the blender with water for 2-3 minutes.

Step 2

Grease the waffle maker with vegetable oil.  Pour the batter in the waffle maker for 10-12 minutes until they are crispy.

Step 3

Spread a layer of guacamole and then top it with salsa.
