In conversation with the wonderful, hardworking and always smiling chef Cesar at JW Marriott Cancun.  Chef Cesar made sure all his guest were happy eaters during there stay.  His ability to attend every guest and pay personal attention to their needs during breakfast, lunch and dinner made the experience so much better. Chef Cesar talks about how he started to cook, and shares his secret salsa verde (green sauce) recipe during our interview.

How did you learn to cook?

When i was a kid my grandmother cooked a lot of desserts and my mother cooked delicious food. I grew up watching them cook and was very interested in learning.

How long have you worked for JW Marriott Cancun?

I have been here for four years and love working.  Marriott is like a family to me and we work in team environment and help each other. We are one big happy family.

What is your favorite vegetarian dish?

I love oriental food, especially Japaneses.  Vegetable tempura is my favorite.

What is your favorite place in Mexico?

Pachuca

How many kids do you have?

I have a new born baby girl and her name is Amayali.

How do you make the salsa verde?

Blend all these ingredients together:  Avocado, onions, green tomatoes, salt, pepper and cilantro with some ice.  Salsa verde can be drizzled on the nachos, eaten with burritos, side of rice and vegetables.
