Mango Kheer can be made an any auspicious occasion. The key is to use the best mangoes during its season.

INGREDIENTS

4 cups whole milk

3 ripe mangoes

2 tablespoons brown sugar

10-12 saffron strands

1/2 teaspoon chopped pistachios (unsalted)

PREPARATION

Step 1

Take a medium sized pot and boil the milk. Add few saffron strands to the boiling milk for a lovely natural orange color. Boil milk until it’s reduced to 1/4 and then add sugar and let the milk cool.

Step 2

Beat the milk with the hand beater.  Once the milk is nice and thick add the chopped mangoes and sprinkle the kheer with pistachios and saffron strands.

Step 3

Serve the Kheer chilled.
