I grew up eating Sabudana Khichdi in Maharashtra.  Instead of Sabudana I use quinoa or barley for this recipe.  Just be generous with all the ingredients and green chilies are mandatory

INGREDIENTS

1 cup quinoa or barley

1 tablespoon olive oil or ghee

1/4 cup roasted unsalted peanuts

1/4 cup cilantro

1 teaspoon cumin (jeera)

2-3 curry leaves

2-3 green chilies

1 tablespoon lemon juice

1 teaspoon brown sugar

1 teaspoon salt

PREPARATION

Step 1

In a medium pan heat oil or ghee, add cumin, curry leaves, green chilies and fry. Add crushed peanuts, chopped cilantro, quinoa or barley, salt, brown sugar, lemon juice and mix well.  Close the pan with the lid for 2-3 mins.

Step 2

Sprinkle cilantro and serve with lemon wedges.
