Shrikhand or Amarkhand is made during mango season in India.  This yogurt based dessert is my personal favorite when its served chilled during hot summer days.

INGREDIENTS

2 cups greek yogurt (full fat) or strained (homemade)

1 cup mango pulp

3/4 cup powdered sugar

1/4 teaspoon cardamom powder

2 teaspoon finely chopped almonds and pistachios

5/6 saffron strands

PREPARATION 

STEP 1

Prepare the homemade yogurt by first tying it tightly in a muslin cloth for 4/5 hours or use store bought greek yogurt. Transfer the thick yogurt in a bowl.

STEP 2

Add mango pulp and the powdered sugar to the yogurt. Add cardamom powder and saffron in the milk and soak it for 5 minutes.

STEP 3

Mix all the ingredients with the help of a beater. Your smooth and creamy Shrikhand is ready.

STEP 4

Decorate it with finely chopped pistachios, almonds and sprinkle saffron threads. Serve chilled.
