INGREDIENTS 

1 tsp mustard seeds

1 tsp cumin seeds

1 tsp fenugreek seeds

1 pinch asafoetida

1 tsp salt

1 tsp red chili

1/2 tsp turmeric

5 curry leaves

3 green chilies

olive oil

4 tbsp gram flour

2 potatoes

3 florets of cauliflower

7 ladyfingers, chopped in long slices

7 cluster beans

1 drumstick

3 tomatoes, blanched and puréed

4 tbsp tamarind paste

coriander, to garnish

DIRECTIONS

Step 1

Take a pot and boil the cluster beans, potatoes, and cauliflower. In another pan, sauté the ladyfinger in olive oil until crispy.

Step 2

Take a pan and heat oil. Then, add cumin seeds, mustard seeds, fenugreek seeds, green chilies, and curry leaves and wait for it to splutter. Add asafoetida and gram flour and sauté for 4-5 mins until the mixture turns golden-brown.

Step 3

Add water and bring it to a boil. Then, add turmeric powder, chili powder, salt, boiled potatoes, cauliflower, ladyfinger, cluster beans, drumsticks, tomato purée, and tamarind purée. Mix well and boil until the consistency is smooth and thick.
