Sweet and Savory crepes for breakfast. Basically, a crepe is a very thin pancake. Alka Daga shared step by step recipe on how to assemble delicious crepe batter at home with Gossip About Food and showed us how to make sweet and savory versions. Crepes are served with variety of fillings. I love to pair my crepes with Nutella, toasted walnuts and banana.
INGREDIENTS
For the Batter:
1 cup whole wheat flour
1 tbsp baking powder
2 tbsp sugar
1/2 tsp salt
2 tbsp organic coconut oil, melted
1 cup milk
1 tsp vanilla extract (only for sweet crepes batter)
For the Sweet Toppings:
Nutella
Berries (strawberries, black berries, raspberries)
Fruits (Banana, Mango)
Sliced toasted almonds
Whipped cream
Savory Toppings:
Cilantro pesto
Diced cherry tomatoes
Sliced colored peppers
Pine nuts
Shredded Paneer(Indian cottage cheese)
DIRECTIONS
Step 1
Mix all the dry ingredients, whole wheat four, baking powder, sugar and salt in a large bowl. Add oil and half of the milk and start whisk gently. Add the remaining milk and continue mixing the batter until smooth and the batter is pouring consistency. Make sure the batter does not contain any lumps. Let the batter sit for 5 minutes.
Step 2
Heat the skillet on low heat. Pour 2 tbsp of batter on the center of the skillet and spread in a spiral motion from the center of the skillet outward. Add desired sweet or savory toppings to the crepes. Raise the heat to medium and within 30 seconds to a minute fold the crepe in half and then fold into another half. Remove the crepe from the skillet and add toppings as desired.
