Soul-Satisfying Vegetable Soup. Provides warmth and happiness during cold winter days. It’s simple and easy to prepare.

INGREDIENTS

2 -3 cups of mixed vegetables (lauki, carrots, and tomatoes)

1/2 Small onion

1 Clove of garlic

1 Small piece of ginger

2-3 Black pepper

1 Small cinnamon stick

1 Clove

1/2 Teaspoon butter or ghee

1/2 Teaspoon olive oil

1 Teaspoon of cumin powder

4 Cups of hot water

DIRECTIONS

STEP 1 

Heat olive oil in a large pot and add black pepper, cinnamon stick, clove and garlic. Sauté for 1 minute and then add chopped onions, salt and mix it for another 1 minute.

STEP 2

Add mixed vegetables to the pot and sauté for 2-3 minutes. Add 4 cups of hot water and bring it to boil for 10 minutes till soft.

STEP 3

Add the vegetables and ginger to the mixer and grind until it’s smooth.

STEP 4

Take a dry pot and put on medium heat.  Add butter, cumin powder, salt and vegetable puree and bring it to boil.  Serve hot.
