Its summer and that’s when you know its watermelon gazpacho time. You can add your own twist to this cold refreshing and slightly spicy soup.
INGREDIENTS
1 large red tomato
2 cups seedless watermelon, diced
1-2 fresh red chilies
1 cumber, diced
1/2 tablespoon chopped red onion
1 clove garlic
1/2 teaspoon red wine vinegar
1 tablespoon extra virgin olive oil
1/2 ice cubes
1/2 teaspoon sea salt and freshly ground black pepper
PREPARATION
Step 1
In a blender combine tomatoes, watermelon, cucumber, chilies, onions, garlic, ice cubes, salt and pepper. Purée until its smooth.
Step 2
Add red wine vinegar, drizzle olive oil, and garnish with chopped cucumber and watermelon before serving. Serve chill.
