I believe that Cooking is not a Science, its an Art. It requires you to be creative. A little change here, a little deviation there from the recipe only adds more flavor! So don’t think you are married to the quantities or the ingredients, be bold and trust yourself!

INGREDIENTS

Onions

Celery

Garlic

Tomatoes

Soaked Cannelini Beans

Winter veggies (Squash, sweet potatoes, yellow squash, pumpkin, kombucha squash)

Parsley

Dill

Thyme

Basil (finely chopped)

Rosemary (very finely chopped)

Salt & pepper to taste

PREPARATION

Step 1

Sauté onions, tomatoes, celery, garlic in olive oil in big stew pot. Throw in some soaked (overnight) cannellini beans, winter squash, kombucha, sweet potatoes, yellow squash, pumpkin, lots of parsley, dill, a little bit of thyme and rosemary and a lot of water.

Step 2

Boil till the beans are really soft and the water has reduced a bit

Step 3

Add salt, pepper, basil and some chili flakes if you like it spicy!
