It’s a must try appetizer if you are on a gluten free diet or looking to avoid bread. The key is to serve hot.  If you like cheese please, by all means, drizzle on the bites or bake them.

INGREDIENTS

1 large green or yellow zucchini

2 fresh corn kernels

1/4 cup cilantro

1/2 teaspoon green chillies

1 tablespoon lemon juice

1 teaspoon butter

1 teaspoon olive oil

salt and pepper as per taste

1 teaspoon crushed red pepper

PREPARATION

Step 1

Cut zucchini into thick slices.  Grill the zucchini on medium heat with olive oil for few minutes.

Step 2

In a medium sauté pan over medium heat, melt butter.  Add green chilies, corn, salt, pepper, and cook for 5 minutes until the corn is tender. Add cilantro and lemon juice.

Step 3

Add 1 tablespoon of corn mixture on the zucchini and serve hot.
