I love eating steamed beets during breakfast, especially after a good workout session. Its a perfect brunch menu salad. If you do not have hemp seeds at home you can always substitute to roasted pistachios, pine nuts, sunflower seeds etc. Just keep in mind the nuts are not glazed with any type of sugar or salt if you are planning on cutting down any added artificial sweeteners or sodium intake.

INGREDIENTS

1 large beetroot, steamed and peeled

2 carrots, shredded with the peeler

4 tablespoon of organic hemp seeds

2-3 clementines, peeled

For the dressing:

1 tablespoon clementine juice

1/2 teaspoon olive oil

1/2 teaspoon lemon juice

hone or sugar (optional)

Salt

DIRECTIONS

STEP 1

Mix julienned beets, shredded carrots and 3 tablespoon of hempseeds together in a salad bowl. Wisk the dressing in a separate bowl and drizzle on the salad and mix gently.  Top it with few wedges of clementines and sprinkle with additional hemp seeds before serving.  Serve chill.
