I love making noodles for my family and am always looking for different ways to tweak it up. Rebecca Simonian, a professional chef, shares with us a delicious garlic sesame noodles recipe that is light and tasty. INGREDIENTS (For 1 person)

100g noodles

1 handful of spinach (any kind of greens can be used)

FOR SAUCE

2 tbsp sesame seeds

2 tbsp garlic, as per preference

2 tbsp spring onion, as per preference

2 tbsp spring onion (scallions), as per preference

3-4 tbsp soy sauce, as per preference

1 tbsp sesame oil

salt, to taste

pepper, to taste

DIRECTIONS

Step 1

In a pan, toast the sesame seeds to a golden color.  Once reached the desired color. Take it off the stove and let it cool. Once cooled, put the sesame seeds into a mortar and pound until a crumbly consistency is obtained. Set aside in a bowl. Then, finely mince the garlic and add it to the bowl along with the sesame seeds. Finely mince the white portion of the scallions and thinly slice the greens as well and add it to the bowl. Add the soy sauce and sesame oil to the mixture and taste. Season with a pinch of salt and pepper.

Step 2

Heat a pot with water. Once the water starts to boil, add noodles to the boiling water. When the noodles are almost done, add a handful of spinach. Once the noodles are ready, strain them and immediately add it to the bowl with the garlic and sesame mix. Toss it. Adjust the seasoning. Place it into a bowl and garnish with some sesame seeds.
