I love Kathi Rolls and find them so filling and satisfying. Great party snack to serve your guests as well. Don’t get overwhelmed by seeing the ingredients and assembly steps.  It’s very easy to make and most of the ingredients can be found in your kitchen pantry.

INGREDIENTS

For Rolls:

1 cup wheat flour

1/4 teaspoon sugar

1/2 teaspoon  salt

3/4 tablespoon water

For Filling:

1 cup paneer smashed

1 onion thinly sliced

3 green chilies finely cut

1 tomato thinly chopped

1 capsicum thinly chopped

10-12 baby corn (cut round slices)

1 teaspoon thinly sliced ginger and garlic

1 teaspoon oil

1/2 teaspoon garam masala

1/2 teaspoon salt

1/2 teaspoon red chilli powder

2 tablespoon fresh cream

1 tablespoon kasturi methi

For Besan Batter

1/2 cup besan (chickpea flour)

1 tablespoon water

1/2 teaspoon garam masala

1/2 teaspoon red chilli powder

1/2 teaspoon oil

salt as per taste

PREPARATION

Step 1

Heat the pan and sauté garlic, ginger and onions until golden brown. Add tomatoes, capsicum, smashed paneer, red chilli powder, salt, garam masala and fry for 2-3 minutes. Add cream and kasturi methi and switch off the gas for all the vegetables to cool down.

Step 2

Knead a dough with all the ingredients for the rolls. Make roti or use store bought tortillas.

Step 3

Mix the ingredients given for the besan and make a nice thick paste. Add besan paste on one side of the roti and place it on a non stick flat pan or tawa.  Then add all the vegetables on the rotil roll.  Wait until the roti is crispy and then roll it. Serve with crispy/spicy onion salad and mint chutney.
