My favorite vegetarian soup, it’s called Adas Bis Silq aka in Arabic (Lentil Swiss Chard Soup). Recipe courtesy of my mommy @zeinsh8.
INGREDIENTS
1 pound brown lentils
5 teacups water
1 bunch of swiss chard, wash and cut into coarse pieces
1 bunch of cilantro, wash and cut into small pieces
4 cloves of garlic + salt
Juice of 1 lemon
1/2 teaspoon cumin powder
1 tablespoon cooking oil
1 teaspoon salt
Preparation
Step 1
In a pot, boil the lentils until they soften.
Step 2
In a medium pan, heat the oil, fry garlic till its yellow (not brown), add cilantro and fry for few minutes. Add the boiled lentils. Add swiss chard to the pan of lentils and boil.
Step 3
Add lemon juice, salt, and cumin powder. Serve hot.
