I absolutely love Maharashtrian food. With a strong blend of spices, Maharashtrian dishes are spicy, fiery, and flavorful. Jyotsna Lunkad, a passionate learner and a perfectionist, has grown up in Maharashtra. She teaches us how to make authentic, Maharashtrian style Thecha (chilli paste) and Garlic Chutney. Jyotsna also shares with us her version of a super quick and healthy Sprouted Pancake. INGREDIENTS  

FOR MAHARASHTRIAN THECHA

3 tbsp oil

15-18 green chillies

12-14 garlic cloves

2 pinches turmeric

salt, to taste

FOR RED GARLIC CHUTNEY

25 garlic cloves

2 tsp cumin

4 tsp red chilli powder

2 tsp coriander powder

2 tsp oil

1 lemon

salt, to taste

coriander, a handful

water

FOR SPROUTED PANCAKES

1 1/2 cup moong sprouts

1/2 cup gram flour

water

3 tsp curd

8-9 spinach leaves, finely chopped

1 tsp ginger

3-4 green chillies, finely chopped

1 tsp coriander powder

1 tsp red chilli powder

1/2 tsp carom seeds (ajwain)

asafoetida (hing)

1/2 tsp cumin

DIRECTIONS

FOR MAHARASHTRIAN THECHA

Step 1

Wash the green chillies and garlic and ensure all water is drained. Then, heat oil in a vessel. Add the green chillies and garlic in the heated oil and cover it with a lid, with the gas on a low/ medium flame. After a minute, add salt and turmeric to the mixture. Again shut it with a lid for 3-4 minutes.

Step 2

Open the lid and take just the green chillies and garlic and put it in a mixer. Be sure to leave the oil behind in the vessel. Grind the chillies and garlic slowly, about 3-4 times, until a half broken consistency is obtained. Pour this mixture back in the oil, mix it well, and serve!

FOR GARLIC CHUTNEY

Step 1

Take garlic, cumin, red chilli powder, coriander powder, and salt and put it in a mixer. Add little water and mix it into a fine paste.

Step 2

Heat oil in a small vessel. Once heated, switch off the stove and let the oil cool for about 15 seconds. Add some lemon to the paste and then pour the oil over it. Your chutney is ready!

FOR SPROUTED PANCAKES

Step 1

Grind the sprouts (half broken) and curd in a mixer. Alongside, mix gram flour and water and make a thick paste. In a bowl, add the sprouts-curd paste, gram flour paste, green chillies, coriander powder, asafoetida, carom seeds, and cumin and mix it well. The batter is ready!
