Everyone loves the combination of mango and coconut.  This dessert is refreshing during hot summer days and soothing with spicy food, my favorite part when its topped with crushed ice.  Aakriti Jain shared this amazing recipe with Gossip About Food.  Photo credit: Aditi Daga

INGREDIENTS

2 tbsp tapioca (sago), soaked in 1/4 cup of water

1 cup mango, chopped or balls of cantaloupe

1 can of coconut milk

1/2 cup ice (crushed)

5-6 tbsp sugar

1/4 tsp salt

DIRECTIONS

Step 1

Soak the tapioca for 2 hours.

Step 2

Boil the tapioca in coconut milk on medium heat until it gets transparent.  Add sugar and salt and stir gently.

Step 3

Chill the mixture for 1 hour in the refrigerator.  Once nicely chilled pour the dessert mixture of the crushed ice and top it with mangoes or cantaloupe balls on the top.
