Hummus can be transformed in so many different flavors.  Here are my recent experiments in the kitchen. My favorite was the smoked Jalapenos hummus especially when I used the spread on the sandwiches the next day.  They are great spreads for kids to try with veggies, dips at your parties or can be used in sandwiches or wraps.

INGREDIENTS

2 Cups cooked chickpeas

1 Tablespoon Greek yogurt

1 Tablespoon tahini (store bought)

1 Tablespoon pine nuts

1 Tablespoon lemon juice

1 clove garlic

1 Tablespoon olive oil

1/2 Teaspoon sumac or crushed red pepper

Salt

Step 1

Soak the chickpeas over night.  Cook the chickpeas in the pressure cooker 8-10 whistles. Drain the excess water once the chickpeas are fully cooked and soft.

Step 2

In the food processor blend chickpeas, tahini, garlic cloves, yogurt, pine nuts, lemon juice and salt.  Process all the ingredients for 1-2 minutes.  Do not over blend the mixture.

Step 3

Sprinkle toasted pine nuts, crushed red pepper or sumac and warm olive oil on the hummus before serving.

NOTE: For different flavors of hummus add parsley, hot peppers or grilled jalapeno, olives, grilled capsicum in the food processor when making the hummus.

NOTE: Make hummus sandwiches for school, work or parties. I always pack them for road trips or picnics and my kids love it!!!!
