Semolina flour cupcakes with lemon flavor.  Great healthy option to bake for kids birthday parties or special events.  Create your own toppings and make it fun if baking with the kids.  Riya Chordia shared with Gossip About Food this healthy recipe that can be assembled very quickly.  Riya showed us fun ways to decorate the cupcakes with very simple techniques.

INGREDIENTS

2 cups semolina (finely grinded)

1 cup milk

1 cup sugar

1/2 cup all-purpose flour

1 tsb baking soda

1 tsb baking powder

1/3 cup butter milk (1/3 cup milk add1 tsp lemon juice to make the butter milk)

1 tsp vanilla essence

1/2 cup vegetable oil

Sprinklers for garnishing

DIRECTIONS

Step 1

Semolina has be finely grinded and soaked in one cup milk for 30 minutes.  Check the batter to be sure its moist, add more milk if needed.

Step 2

Whisk together all the dry ingredients first. Add butter milk, vanilla essence, oil and mix well until all the ingredients are incorporated well and the batter comes to a smooth consistency. Make sure the batter has no lumps .

Step 3

Preheat the oven for 20 minutes at 350F.  Pour the batter to the cupcake baking dish, add few colorful sprinklers on the top  and bake it for 20-25 minutes.

Recipe Notes:

Do not pour the batter to the baking dish all the way on the top.

Sprinklers on the top, berries, chocolate sauce, peanut butter icing, dust coco powder or sugar or chocolate ganache

For garnishing use melted chocolate and pour a in pipping cone to make deserved designs or letters.  If the chocolate gets solid outside in the pipping cones simply put it back in the microwave for 10-15 seconds

Use 1/3 cup yogurt instead of vegetable oil (optional)

Add flavored extracts instead of vanilla essence (pineapple, orange)
