Sprouted Matki or Moth Beans Salad.  I simply love this salad because it makes raw mango and carrots so delightful to eat and the roasted peanut gives a nice crunch.  Its always my favorite for lunch or during afternoon tea time. This is our version of slaw with steamed sprouts.  Always a hit at any party!!!

INGREDIENTS

2 cups sprouted moth beans (steamed in salt and turmeric powder)

1 cup of shredded raw carrots and mango

1 small onion, thinly sliced

1/4 cup roasted peanuts

2 tablespoon coriander, chopped

1 green chili, chopped

1 teaspoon cumin powder

1/2 teaspoon rock salt

1 teaspoon lemon juice

PREPARATION

STEP 1

Soak the moth beans over night and then drain the excess water next morning,  Transfer the beans into cheesecloth and wrap it very well and leave it in a bowl for few 5-6 hours for the beans to sprout. Be sure to splash few drops of water over the cheesecloth in between.

STEP 2

Once the beans are sprouted, steam them in hot water for 2-3 minutes.  Add salt and turmeric to the boiling water.

Step 3

Allow the beans to cool for 1-2 minutes.  Add shredded mango, carrots, sliced onions, cilantro, green chili, red chili powder, cumin powder, rock salt and lemon juice. Mix all the ingredients and add roasted peanuts at the end.  Before serving garnish with cilantro, roasted peanuts, and lemon wedges.
