Perfect lunch bowl with loads of Asian vegetables.  I love the products from Lotus Foods because the company not only has amazing stories to share in how they are making a difference to help the environment and farmers but they continue to  pursue smart products, better growing practices, and delicious whole grain heirloom rice varieties.  Here is a simple, delicious vegan veggie bowl assembled in less than 10 minutes for lunch.

INGREDIENTS

1 Packet pad thai noodles

2 Cups of mixed vegetables (bok choy, red cabbage, broccoli, capsicum, scallions, cilantro leaves)

1 Tablespoon toasted peanuts (crushed)

1/2 Teaspoon sesame oil

1/2 Teaspoon toasted sesame seeds

1/2 Teaspoon soy sauce

1/2 Teaspoon lemon juice

Thai chili

Salt

Step 1

Soak or boil the noodles in hot water to soften, about 8 to10 minutes. Drain and set the noodles aside in cold water.

Step 2

Heat the sesame oil in a medium skillet over medium-heat. Add garlic and stir-fry until brown, add toasted sesame seeds, bok choy, and salt.  Set side and repeat the same process for any vegetables that you would like to add to your bowl (Broccoli, Carrots, String Beans, Squash, Spinach, Red or Napa Cabbage etc..).

Step 3

Remove the cold water from the noodles.  Heat the sesame oil in the medium skillet, add noodles, thai chili, soya sauce, toasted sesame seeds, lemon juice, and sea salt. Stir -fry for a minute. Do not over cook the noodles otherwise they get sticky.

Step 4

Arrange all the vegetables,scallions, cilantro leaves, noodles and sprinkle toasted peanuts as shown in the picture. This veggie bowl is perfect for lunch or late afternoon!
